Double-Dipped, a Drums N Flats exclusive for Wings & Ribs

Drums N Flats prides itself on their legendary double-dipped style of cooking. Their wings and ribs are almost totally cooked, then tossed in sauce, raked over their smoky BBQ till perfectly cooked, then tossed again in a totally different sauce giving you 4 layers of flavour to savour.

“One of most fun parts about this job is coming up with names for our homemade sauces,” says Dan Ferracuti, owner of Drums N Flats. “'Raging Buffalo’ is tossed in Cajun BBQ and then buffalo sauce for an extra spicy bite. We have ‘Honey Boo Boo,’which is tossed in honey garlic and then mango jerk. Then, there’s ‘The Angry Mexican,’which gets a tequila lime bath and is finished with hot sauce.” Poking a little fun at his fellow Canadians, Dan also makes a sauce called ‘The Hoser – Eh?’. “It starts with a maple and rye soaked BBQ sauce, finished with a dusting of candied bacon,” laughs Dan.

Drums N Flats staff sample the sauces, mull over the flavours and ingredients and start tossing name ideas into a hat. “We want to offer a different food experience,” says Dan.“That’s why people go out to eat. To get a new food experience.”

Fresh Ingredients

Dan won’t accept anything less than the best food at Drums N Flats. His chicken is always fresh from Ontario and his pizza dough is made on-site. As for the wings, Dan is proud of his chef’s double-dip cooking method. “What this means is they are covered in one of our special sauces and cooked to about 90% over a smoking BBQ,” he says.“Then we toss them in a different sauce and barbecue them again.”

The tempting menu isn’t exclusive to wings, though. The restaurant offers great fresh salads, homemade beer-battered fish and chips, a range of burgers and tasty pizzas.“We also double dip our ribs,” says Dan.

At Drums N Flats, the bar and table tops are made with beautifully polished reclaimed wood from Mennonite country. “It’s all from a 200-year-old barn,” Dan notes. If you look closely you’ll notice that lamps hanging above the tables are snare drums and a disco ball in the centre of the ceiling hints at fun musical times to be had. “Kids who come in with their families love that disco ball and how it makes all that glitter.”

For sports fans, there’s not a seat in the house where you can’t see one of the HD TV screens or the 120" projection screen. “We are hometown friendly,” says Dan.  “We like our Leafs and Raptors.”

Live cover bands perform classic rock on Fridays for Friday Night Live with more groups gracing the stage on occasional Saturday Night Specials. “We’re all about ‘wings beer, rock ‘n roll and sports,” adds Dan. “All the best things in life!”
