On August 17, 2016, Joel Hector knew he was taking a chance. It was opening day for his new restaurant, Fork and Salad, in Mount Royal Village. Since he was opening a salad restaurant in a meat-and-potatoes town, Joel had no idea what to expect. He had spent months lining up suppliers of fresh grains and greens.  If nobody showed up, he was stuck with a lot of perishable inventory.

Instead, his staff sent him shopping as it was looking as though they would run short of supplies. “It was remarkable,” Joel recalls. “The first few days we were lined up out the door. We sold out of food. I was running to Safeway. I bought the entire produce section. I’m not exaggerating – I bought every vegetable Safeway had.”

I do love the Kale Caesar. However, the prices are just too out of line. The last visit the little extra cheese I added took the salad all the way to $18! Too rich for me! And the staff are some of the least friendly I have encountered and always appear to be annoyed by the customers presence. I have not been back in months and likely will not.
